To kick off our new Behind the Bar series, we’re introducing someone who brings both heritage and high energy into every glass: Ignacio.
From Cuba to Brussels, a story that was meant to happen
For Ignacio, bartending isn’t just a job, it runs in the family.
“My grandpa and aunt were bartenders in Cuba,” he shares.
What started there naturally evolved into something bigger. After learning the craft in Cuba, Ignacio continued refining his skills in Belgium, bringing with him not only technique but a whole cultural approach to hospitality.
And it shows, not just in what he makes, but in how he connects.
More than cocktails: a human experience
Ask him what he loves most about the job, and the answer is instant:
“Interacting with clients and learning about different cultures.”
Behind the bar, Ignacio isn’t just mixing drinks, he’s reading the room, adapting, engaging, creating moments.
That’s exactly the spirit of Cardo: not just serving but connecting.
Playful, vibrant… almost out of this world
How does he describe the bar?
“Playful and fun.”
But then he adds something even more telling:
“It feels like you’re on another planet.”

“I love flair bartending.”
